Dinner tonight...drummmroollllll

I do love getting my monthly Cooking Light in the mail. It never fails that when I think this could be one subscription that I could go without; they pull through.
This is a keeper of a recipe and man was it good!

I skipped the rice and make a cauliflower mash to go alongside. :)
